Republica de Cacao Ecuador 55% single origin dark enrobing chocolate has subtle cocoa flavor with notes of toast and delicate spices. It is ideal for enrobing, molding, or chocolate bars, and also great for mousse, ganache, beverages, sauces, and more.

T1 Melting 45-50C / 113-122F
T2 Crystallization 28-29C / 82-84F
T3 Working 30-31C / 82-87F

Origin of beans: Ecuador

Flavor Notes: Sweet, Toasty, Bitter, Spicy, Dried Nuts

Ingredients: Sugar, cocoa liquor (cocoa mass) from Ecuador, cocoa butter, emulsifier (soy lecithin E322), natural vanilla extract.

Dietary Notes: This product may contain traces of nuts (almonds, hazelnuts, pistachio, pecan nuts), peanut, gluten, sesame, milk and egg proteins. This product is made in an installation that uses milk.

Shelf Life: 18 months from date of production 

Storage Recommendations: Store in an airtight container and keep in a cool, dry place between 60-64F (16-18C).

Warm Weather: Temperatures above 70F - Chocolate and perishables ship Monday through Wednesday for USPS Priority and UPS 2-Day Air, or Monday thru Thursday for UPS Next Day Air. Ground shipping should NOT be used during warm weather.
