Yumgo Vegan Egg White Substitute is plant-based and can be used in place of egg whites in both sweet & savory applications. It is easy to use in the production of chocolate and fruit mousses, French or Italian meringues, and biscuits like dacquoise, financiers, and macaroons. It can also be used in nougat and other confectionery applications as well as beverages.

Dietary Notes: Free of all common allergens, including gluten, nuts, and soy
Applications: Meringues, mousse, biscuits, confectionery uses, beverages
Directions: Dissolve 100 g. in 700 g. of water to obtain 800 g. of liquid egg whites (an amount equivalent to the whites of 25 whole eggs). Before use, allow the mixture to stand to be sure that all of the water is completely absorbed.
