Yumgo Vegan Egg Yolk Substitute is plant-based and can be used in place of egg yolks in both sweet & savory applications. It is easy to use in the production of items like creme brulee, pastry cream, mayonnaise, sauces, biscuits, and cookies.

Ingredients: Pea protein, Gelling: agar agar, Curcuma, Flaxseed fiber

Applications: Creme brulee, pastry cream, mayonnaise, sauces, biscuits, and cookies
Directions: Recommended dosage : 11,13% of Yumgo Yolk powder + 11,13% of plant based oil (rapeseed or sunflower). Combine water, powder and oil with a hand blender to obtain a homogeneous mixture. Use the same amount of YUMGO Yolk as egg yolks in recipes. To obtain a gelification (egg custard, crème brûlée, etc.) bring the mixture to the boil during the recipe. Gelification will take place when the product cools down.
