Sosa Isomalt is ideal for making sugar decor and garnishes for cakes, displays, and plated items as well as sugar or caramel sculptures. It can also be used in making hard candies, coated products, chewing gum, chewy candies, baked goods and mixes, and ice cream.
Derived from sucrose, it has great stability in high temperatures, high resistance to humidity, long lasting flexibility, and superior shine. Stabilizing acids are not needed when working with this product. It will not crystallize and is easily colored.
