Ancel Macaron Mix is convenient and consistent, allowing you to create the perfect macaron cookie by simply adding water. This mix can be flavored and colored and is freeze/thaw stable. Take the guesswork out of creating fantastic macarons with this simple-to-use mix!
Storage Conditions: Dry and cool (59-68F, 15-20C), out of direct sunlight, humidity, and odors; once opened, seal and store in an airtight container.
Ingredients: Sugar, almond powder 28%, egg white powder, lactic acid esters of mono- and diglycerides of fatty acids (contains gluten, milk), salt.
Dietary Notes: Vegetarian. Contains nuts (almonds), eggs, gluten, milk. Manufactured in a facility that processes nuts.
Recipe: 1000 g Macaron Mix, 200 ml Tepid Water
Directions: Pour all ingredients into a mixing bowl and mix at high speed for five minutes, using the paddle attachment (NOT the whisk attachment). Pipe the macaron shells onto a tray lined with a silicone baking mat or parchment paper. Bake on doubled trays/sheet pans.
Using a convection oven (highly recommended), bake at 266F (130C) for about 20 minutes, draft open.Using a deck oven, Bake at 166F (130C) for about 35 minutes, draft open.
Let the shells cool down completely before filling. Keep in a cool place so the shells can re-hydrate.
