República del Cacao Amazonía 75% is a single-origin dark chocolate made with Ecuadorian fine aroma cacao variety “Sacha” sourced from the Amazon region. Despite its high cacao percentage, it’s known for a surprisingly round, approachable profile—layering roasted cacao intensity with nutty notes like almond and hazelnut, plus earthy, woody tones that feel reminiscent of a forest and linger with a long finish.
Built for professional versatility, Amazonía 75% offers high fluidity (4/4), making it an excellent choice for a wide range of applications—from ganaches and mousses to molding and machine enrobing, as well as ice creams, sorbets, sauces, and beverages. It’s formulated with cocoa liquor from the Ecuadorian Amazon, sugar, cocoa butter, sunflower lecithin, and natural vanilla extract, delivering deep cocoa flavor with smooth handling and consistent results.
For storage and planning, it’s recommended to keep this chocolate at 16–18C, and it carries an 18-month shelf life—a great fit for pastry kitchens that want bold flavor, reliable performance, and a distinct origin story in every finished dessert.

Warm Weather: Temperatures above 70F - Chocolate and perishables ship Monday through Wednesday for USPS Priority and UPS 2-Day Air, or Monday thru Thursday for UPS Next Day Air. Ground shipping should NOT be used during warm weather.
