Irca Reno X Bianco White Chocolate 28% (5.5 lb) has intense milk flavor with notes of caramel and vanilla. With its mid-range fluidity, it is versatile and great for many confectionery uses, including mousse, ice cream, ganache, cream fillings, nougat, cremino, decorations, and gelato, but can also be used in preparing bonbons, enrobing, bars, and pralines and more.
Composition: 28% Cacao, 22% Milk, 34-38% Fat
Fluidity: Three drop (medium)
Tempering: Melting 45C/113F, Tempering 27-28C/81-82F, Working 28-30C/82-86F
Ingredients: Sugar, cocoa butter, whole milk powder, soy lecithin, vanilla extract.

Warm Weather: Temperatures above 70F - Chocolate and perishables ship Monday through Wednesday for USPS Priority and UPS 2-Day Air, or Monday thru Thursday for UPS Next Day Air. Ground shipping should NOT be used during warm weather.
