Cuisine-Tech Apple Pectin high-methylester pectin standardized with dextrose derived from wheat. Apple pectin is a polysaccharide from plant cell walls used as a gelifying agent.

Food Label Name: E440. A high methoxyl pectin.

Storage Conditions: Dry and cool (68 - 72F, 20 - 22C); keep out of direct sunlight and closed air tight after opening.

Ingredients: High methylester apple pectin standardized with dextrose

Additional Notes: Slow set, spreadable gel texture. Dextrose content is variable, 25-45%. The dextrose is derived from wheat and is GMO free.

Applications: As a gelifier for pates des fruits and glazes.

Directions: Ready to use. For pate de fruit, typically combined with sugar BEFORE being added to the mass. Requires the presence of an acid to set properly.
