PRODUCT DESCRIPTION

Cacao Barry Pâte à Glacer Blonde is a professional-quality blonde compound coating designed for pastry chefs and chocolatiers seeking convenience, consistency, and rich caramelized flavor. Made with vegetable fats instead of cocoa butter, this easy-to-use coating melts smoothly and sets quickly without tempering—making it ideal for high-volume pastry and confectionery production.

With its warm blond color and indulgent notes of caramel, biscuit, and buttery sweetness, Pâte à Glacer Blonde brings both flavor and visual appeal to finished desserts. Its smooth flow and glossy finish make it perfect for glazing pastries, coating cakes and éclairs, dipping confections, decorating desserts, and finishing frozen treats.

Designed for efficiency, this blonde compound coating offers reliable performance, consistent shine, and easy handling while delivering a distinctive caramelized taste.

Ingredients: Sugar, hydrogenated vegetable fat (coconut and/or palm kernel), nonfat dry milk, cocoa powder processed with alkalai, lactose (milk), soy lecithin (an emulsifier), artificial flavor(s), vanillin (artificial flavor).

Dietary Notes: RSPO MB system certified. Contains soy and milk.

Applications: Glazing of desserts, individual cakes, decoration, enrobing.

Directions: Melt in a bain-marie at 45C/113F maximum. May also be heated in a microwave.

Storage Conditions: Dry and cool (68 - 72F, 20 - 22C); keep out of direct sunlight and closed air tight after opening.
