Cacao Barry Mi-Amère 58% Dark Couverture Chocolate 11 lb is a premium, professional-grade Belgian chocolate celebrated for its intense cocoa character and exceptional versatility. Featuring a delicately roasted cocoa taste with fruity notes and subtle sour and vegetal hints, Mi-Amère delivers a dynamic, well-balanced flavour profile that enhances both classic and contemporary pastry creations.

With its medium fluidity, Cacao Barry Mi-Amère 58% dark chocolate couverture offers excellent workability. It melts, tempers, and molds smoothly, making it a great option for ganache, moulding, and enrobing. Its balanced structure and reliable performance also make it suitable for glazing, baking, mousses, crémeux, sauces, and plated desserts, ensuring consistent, high-quality results across a wide range of applications.

Crafted in Belgium from carefully selected cocoa beans, this dark couverture contains a minimum of 58% cocoa solids and a high cocoa butter content, providing a smooth texture, glossy finish, and clean snap.
