Irca Sinfonia 33% White Chocolate is slightly sweet with creamy notes and an outstanding soft and velvety texture. This chocolate is highly fluid and versatile, making it great for many applications, including mousse, enrobing, ice cream, ganache, praline, bars, cream fillings, nougat, cremino, decorations, gelato, bonbons, and more.

Composition: 34% Cocoa, 40-42% Fat

Fluidity:  Five drop (high)

Tempering: Melting 45C/113F, Tempering/Working 28-30C/82-86F

Ingredients: Sugar, cocoa butter, dry whole milk, dry skimmed milk, emulsifier: soy lecithin.

Dietary Notes: Halal, Gluten-free. Contains soy and milk. May contain tree nuts.

Storage Conditions: Dry and cool (68-72 F, 20-22 C) away from direct sunlight; once opened, store airtight.
