Irca Reno X Latte Milk Chocolate 33% (5.5 lb) combines the sweetness of milk with notes of caramel and rich cocoa. With its mid-range fluidity and creamy milk chocolate flavor, it is versatile and great for many confectionery uses, including mousse, ice cream, ganache, cream fillings, nougat, cremino, decorations, and gelato, but can also be used in preparing bonbons, enrobing, bars, and pralines and more.

Composition: 33% Cacao, 20% Milk, 34-38% Fat

Fluidity: Three drop (medium)

Tempering: Melting 45C/113F, Tempering 26-28C/79-82F, Working 28-30C/82-86F

Ingredients: Sugar, cocoa butter, whole milk powder, unsweetened chocolate, soy lecithin, vanilla extract.

Dietary Notes: Kosher Dairy. This product contains milk and soy.

Storage Conditions: Dry and cool (68-72 F, 20-22 C) away from direct sunlight; once opened, store airtight.

Cool Weather: Temperatures below 70F - Orders ship Monday through Friday.

Warm Weather: Temperatures above 70F - Chocolate and perishables ship Monday through Wednesday for USPS Priority and UPS 2-Day Air, or Monday thru Thursday for UPS Next Day Air. Ground shipping should NOT be used during warm weather.
