Noel Feuilletine crispy wafer bits add a slightly sweet crunch to a variety of pastry creations. Use these crunchy crepe flakes to provide texture to preparations such as mousse and ganache. Feuilletine will stay crunchy in fat-based masses.
Ingredients: Enriched wheat flour (niacin, reduced iron, thiamine, mononitrate, riboflavin, folic acid), Malted barley flour, Sugar, Dextrose, Nonfat dry milk, Unsalted butter, Salt, Sunflower lecithin
Storage Conditions: Dry and cool (68 - 72F, 20 - 22C); keep out of direct sunlight and closed air tight after opening. Store in a dry place, away from foreign odors and protected from humidity.
Applications: To give texture and some flavor to mixtures. Not recommended for water-based or liquid-heavy products.
Directions: Ready to use. Often mixed into fat based masses (e.g., melted chocolate, praline).
