Lorann Soy Lecithin is an oil-like extract used to preserve, emulsify, and moisturize foods, as well as control crystallization and as a dough conditioner. Lecithin is often used by when making chocolates, caramel and taffy. It can also be used to thin chocolate since it is more cost effective than cocoa butter and less product is needed for similar results. Combined with vegetable oils, lecithin can be used instead of high-calorie oils for greasing pans and sauteing food.
Ingredients: Liquid soy lecithin
Dietary Notes: Contains soy. Kosher, Gluten-free
Usage Recommendations: 0.25 - 0.50% lecithin per total batch. Too much lecithin can have the reverse effect and cause chocolate to thicken. When used as a dough conditioner and mild preservative: 2 to 3 teaspoons for every 3 cups of flour.
